<p class="p1">Gnocchi mamma emma are prepared just as our grandmothers did on Sundays. It all starts with <strong>fresh potatoes</strong> -never flaked potatoes with water, or sterilized industrial purees-which arrive at the plant still covered with soil.<strong>The potatoes are: washed, hand-selected, steamed in their skins</strong> (to retain starch and organoleptic properties), <strong>peeled and</strong> mashed to obtain a puree rich in fragrance and flavor, kneaded according to the traditional recipe: wheat flour, eggs and a pinch of salt.  </p>

<p class="p1">The dough is worked carefully, and <strong>each gnocchi is passed over the grater to obtain the typical shape that our grandmothers used to shape with their thumbs on the back.</strong> This seemingly simple gesture has not only an aesthetic value: in fact, it has a double function. On the one hand, the pressure of the thumb lightly &#8220;hollows out&#8221; the heart of the gnocchi, making it thinner and giving it a <strong>softer texture</strong>; on the other, the central groove and grooves left by the grater create a rough surface, <strong>perfect for better holding the sauce.</strong> </p>

<p>The story of Gnocchi Mamma Emma tells a story of <strong>resilience and</strong> entrepreneurial <strong>innovation</strong>, one of many that have marked the success of Made in Italy in the world.</p>
<p class="p1">The year was 2013, and two entrepreneurs from Treviso, specialists in the production of fresh potatoes gnocchi since 1993, were faced with a challenge: increasingly aggressive competition based solely on selling price and not on the goodness of the finished product.</p>
<p class="p1">They, on the other hand, had always chosen the path of <strong>quality</strong>, making gnocchi with only<strong> fresh potatoes-not</strong> flaked potatoes and water or sterilized mashed potatoes-incurring higher costs for sourcing, sorting, washing, and cooking tubers before they could be included within the gnocchi production cycle.</p>

<h4><strong>The choice of quality  </strong></h4>
<p class="p1">To stand out and continue to grow, the two partner-friends decided to set their sights even higher, creating a line of gnocchi that would reproduce the <strong>homemade process</strong> in every way: from the choice of raw materials, to the production process, to the &#8220;grated&#8221; form, the one for family Sundays.</p>
<p class="p1">To achieve this they put their studies in mechanical engineering to good use, independently designing and developing <strong>unique machinery. </strong>Only in this way was it possible to give the characteristic &#8220;grated&#8221; shape even to a fresh potato dough &#8211; much softer than the dough of potatoes flakes and water for which standard machinery had existed for decades &#8211; since the majority of gnocchi on the market is made precisely from potatoes flakes and water. </p>

<h4><strong>Packaging and naming</strong></h4>
<p>Such a &#8220;beautiful and good&#8221; product also deserved special packaging: Mamma Emma was the first gnocchi in Italy to come in a kraft paper case, inspired by jute sacks of potatoes, to recall the naturalness of its origins.</p>
<p>And then the name. In a market full of brands that evoked grandparents, very few celebrated mothers. <strong>&#8220;Emma&#8221; is the name of the mother of one of the two founders</strong>, but it is also an international name, easy to pronounce abroad: perfect for a project that already dreamed of traveling the world. </p>
