Our passion for tradition has led us to strictly follow the typical South Tyrolean recipe, to bring to your home the authentic dumplings with speck. According to tradition, the dough of the mini dumplings is composed of cubes of bread, milk, eggs and flavoured with speck, parsley and flour.
The ingredients of our mini dumplings with speck are: type “0” bread (type “0” wheat flour, water, salt, yeast), fresh pasteurized milk, water, speck 12% (pork, salt, spices, dextrose, sucrose, flavorings), mortadella (pork, pork tripe, salt, milk protein, sucrose, flavorings, spices), eggs, sausage (pork, salt, pepper, lactose, dextrose, sucrose, flavorings, spices), type “0” wheat flour, parsley, chives, salt, pepper, garlic.
The dumplings or knödel are born in Germany, precisely in Bavaria, as a “poor” dish intended for peasant food. Delicious, and rich in nutrients, these great gnocchi (the term knödel would derive from “knot” which stands for “lump”) have become a real delicacy, which has become part of the Italian culinary tradition.
