Wholewheat gnocchi with beetroot pesto
The beetroot pesto adds flavor and color to our wholewheat gnocchi
- Wholewheat gnocchi : 350 gr
- Steamed beetroots: 200 gr
- pine nuts: 25 gr
- cashews cream: 25 gr
- Extra virgin olive oil: 50 ml
- Lemon juice: 50 ml
- water: 100 ml
- Finely chopped sage (or other herbs): to taste
- Salt: to taste

The beet pesto is perfect if you want to add color and flavor to your meals. To make the pesto mix the steamed beetroots with pine nuts, cashews cream, extra virgin olive oil, lemon juice and sage.
Put the pesto in a pan and add 100 ml of water. Let it boil and then pour in the mamma emma organic wholewheat gnocchi. They will be ready in 3 minutes! Before serving, decorate with some toasted pine nuts and some finely chopped sage.
