A humble dish that is very easy to make because it requires very few ingredients. There are many different versions of fondue, depending on the cheeses used and the region where it is prepared. We chose to prepare it with asiago cheese.     <\/p>\n\n<p><strong>Asiago<\/strong> takes its name from the Asiago Plateau, where it has been produced since the year 1000. There are two types of Asiago, fresh and seasoned. <\/p>\n\n<p>Fresh Asiago has a young, delicate and pleasant flavor and a taste of freshly milked milk, which melts in the mouth releasing sweet and slightly sour notes. It is aged for at least 20 days. Aged Asiago has a savory taste and a stronger personality. The longer the aging, the more the flavor will be enriched with pleasant, even slightly spicy accents.
