Stir fry the shallot with the extra virgin olive oil and then add the mushrooms. Leave to cook with the lid and add salt and pepper to taste. Let it cook until the mushrooms are tender. If necessary you can add a little water or broth if ready.


Pour the gnocchi into the mushroom sauce, add 100ml of water and mix well for 3 minutes. Once the gnocchi are ready, sprinkle some grated Parmesan cheese and chopped parsley. Serve directly on the plates and enjoy these delicious pumpkin and mushroom-flavored gnocchi!
